NOTES Vinazzu was born after several years of research and winemaking tests, as well as selection of grapes studied in various proportions that we do not intend to make known, however the Nerello Mascalese remains the basic product. However, the reference point is the technique used a hundred years ago, numerous variations have been included that concern the state of ripeness of the grapes and the winemaking technique, which takes place, among other things, in thermo-controlled tanks. The harvesting period was extended as long as possible, on average it takes place in November, the selection and processing is strictly manual, the yield is very low, less than 30%. A full-bodied wine is obtained which is very rich in polyphenols and soft tannins, with a high alcohol content, with a sugar content slightly higher than normal and which does not require sulphitation except in the wine-making phase.
