This late ripening grape is the main variety used in Etna DOC. It is usually found mixed with Catarratto and white Minella. As a varietal wine, Carricante produces a fresh, slightly straw-yellow, slightly fragrant white wine. The name Carricante derives from load, in reference to the strong yields of the variety.
Production area: c / da Santo Spirito Passopisciaro, municipality of Castiglione di Sicilia (Catania).
Grapes: 100% Carricante
Soil characteristics: volcanic.
Exposure: north side of Etna, 700 meters a.s.l.
Aging: 6 months in steel and then 60 days in bottle.
Visual Exam: Intense and consistent straw yellow.
Food matching: Ideal with fish dishes, white meats and pastas, to be tried with raw white prawns and extra virgin olive oil.
