Kados Grillo I.G.P. Terre siciliane - 2017
Grillo, an autochthonous grape variety with characteristics of freshness and flavor, supported by a remarkable structure, is fully expressed in Kados. The floral and citrus scents, the wide and velvety taste and the good longevity make this wine, produced with the grapes of Tenuta di Risignolo, one of the most versatile whites of Duca di Salaparuta.
TERRITORY OF ORIGIN - Western Sicily, between the municipalities of Salemi and Gibellina, Tenuta di Risignolo.

CLASSIFICATION - IGT Terre Siciliane.
SOIL - Mixed composition, mostly siliceous-clayey.
ALTITUDE - Around 300 meters above sea level
VINEYARDS - Raised in espalier and sapling with a density of over 5,000 plants per hectare.
CLIMATE - Mild and rainy winters with very dry and breezy springs and summers with a strong temperature range.
GRAPE HARVEST - Manual and morning, at perfect ripeness, during the first fortnight of September.
VINIFICATION - From the grapes, further selected during the harvest, about 55% of flower must is obtained which slowly ferments in small new oak barrels for about 40 days.
MATURATION - At the end of November the wine is decanted, with its own yeasts, in cement vats etrified in cool cellars where it continues its evolution until late spring.
AGING - For at least three months in bottle at controlled temperature.
TASTING Color - straw yellow with faint greenish reflections. Bouquet - floral, slightly vanilla and complex. Taste - broad, velvety, lively, with great structure and persistence.
ALCOHOL CONTENT - 12.5% - 13.0% in vol.
SERVICE TEMPERATURE - 10 ° - 12 ° C.
FOOD PAIRINGS - Accompanies good fish dishes, noble crustaceans and tasty white meats.
STORAGE - Bottle lying in a cool place (15 ° C) away from light.
DURATION - Over four years if stored in suitable cellars.
